Pomelo and Prawn salad

To turn in to a main course, just add a piece of steamed salmon!

Yesterday was my first cooking class, and it's amazing what flavors you can create from such simple ingredients..
With just a lime, some soya sauce, and a bit of honey you can have a great salad dressing that works very well with fruits in a salad..
For this recipe they use Pomelo, the cousin of the grapefruit.. break it apart, add some red onion, tomato, finely chopped lemongrass, spring onions, cooked prawn, and shallots.. top it off with roast grated coconut.. and you have a killer meal with only 98.7 Kcal!

The power of the Lime!

"Hot water with a squeeze of lime in the morning helps the body energise and aids in cleaning" and helps reduce the body's acidity level!

The power of Garlic!

It turns out, the best thing you can do for your cholesterol and blood pressure is garlic.. I know it may be harsh to have it raw.. But no worries, at the spa they have found a way to steam it, and make it turn in to butter! No oil, no seasoning, and it's not lacking anything.. I never thought I could be the kind of person to just spread garlic on a piece of (carrot bread), as of today I am a converter as long as it is steamed!

My main course was a mixed seafood curry... I asked them for no chillies... but the picture is worth a thousand words.. My mouthwas a FLAME! Please pour me some more lemon grass water to cool down this fire!

No more comments on my main dish, I'm still feeling it bubble in my tummy!

Lunch today

Strawberry Sorbet 80 calories!

Day one has passed, and so far it's not so bad.. Actually it's great to eat so light! You know that feeling of wanting to nap after Lunch?
Well it doesn't exists here... They have you eating food that is so raw and natural, your body is screaming for more! (I'm not joking)

Above is an average plate of a little bit of everything.. Basically you have a buffet.. and you can pick and choose as you like while figuring out your calorie count..

So my salad above is a mixed option of green leaves, tabbouleh, and beef salad.. about 390 calories..

The highlight of the lunch: Cucumber vinaigrette as a salad dressing.. unbelievable.. (Stay tuned till I find out how they make it)

Let's get started!

It's about 3pm, just finished my lunch, and fixed my schedule and went up to my room to discover these exotic fruits.

Trick number one: All snacks should be healthy (if you can't resist.. they have a mini bar hooked up with low calorie cookies and nutrient bars)

Load your self up with some fruits the next time the cravings kick in!!

If I can sneak my camera in to dinner, I'll show you what we will be having!

Breakfast area!
Dear Readers... I'm on my way to a health spa this weekend! New years resolution 2010 Get Fit! (Finally)

After serious consideration about wether I should blog this or not, Jassim my partner said go for it.. since it is a food experience it self!

So I will be taking you along in my journey in Thailand, and what we eat and cook to get healthy.
This is my second trip to this piece of heaven in earth, and the last time I went, I ended up learning a lot about their life styles and form of cooking.

A few of the MUNCH salad roll recipes, and BBQ healthy dishes are inspired by them! And this is what I plan to do... learn a few more tricks to cooking healthy and applying in to our new restaurant menu that will be changed very soon. (Shhhh, we will launch a healthy section)

So assuming that I will be able to connect to the Internet.. for the next two weeks I will be sharing with you my day to day plan of food intake and cooking classes in Thailand.

And off course I will just be posting some of the beautiful sights that I see...

Count down: 5 days left!

Experementing!

I'm trying out new recipes on the BBQ... and this one was great.

Have you heard of a cheese called shavings of a monks head?
Well it's a very creamy light cheese, and I decided to try it out on the pizza instead, with just some mushrooms and a little bit of garlic and olive oil...

Oh my God it was good!

I'm not sure if it something we can add to the menu, because the cheese is a very expensive to use so freely.. But if your at home and in the mood to try new things... I highly recommend trying this!!

You can find this cheese at Dean and Deluca, it's a round long block!
Enjoy!
