Spicy grilled beef salad with Siamese herbs 181.17 Calories

This by far is one of my favorite new salads.. delicious, flavorful, filled with proteins and filling for such a small portion. To make this salad I had to learn a few new neat tricks that I think you can make at home and is worth the time and effort put in to it!

To make the dressing you will need a garlic clove, mint stems chopped (without the leaves) chili, lime juice, soy sauce and honey!
So far it's simple.. now this is the interesting part: you will need to warm up some brown rice in a pan and roast it, add some lime leaves, and sliced galanga or ginger.. When it's cooked, allow it to cool and then add in the blender.. It should turn in to a powder.. Once you have that mixture, it's great to mix in with any dressing! Very potent taste, so use only one tbs full to the dressing.

You will need for the salad a nice juicy piece of tenderloin.
Finely sliced shallots
Finely sliced lemongrass
Fresh mint leaves
A pinch of finely sliced kaffir lime leaves
And some thin sliced red chili for colour (add the seeds if you want it to be spicy)
Mix all the ingredients together with the dressing!

Heat a non stick pan.. add a table spoon of soya to the meat and place on the pan (no Oil) let it cook on both sides till pink inside..
This dish is much tastier if the meat is not well done..aim for medium!
After it's cooked.. finely slice the tenderloin and allow to rest, when cooled add to the salad.
The bowl on the far right is what your brown rice mixture should look like!

To make the dressing make sure to beat the garlic and chopped mint stems and chili till it turns in to a paste, then add the watery ingredients!

By the way it smelled amazing!

I want to get me one like that..ooh, I'd drive around in the chalet beach with it.. What do you think? Summer time chalet beach BBQ?

Another eye opener!

For lunch we had to choices, Pineapple sorbet at 30 calories, or a banana strudel kind of tart at 120 calories..!

Just in case you can't imagine it, I broke it down for you.....

So you can have one tiny piece as the equivalent of a scoop of sorbet.. Wow.. Look at the difference!

By the way, keep in mind the banana cake is also low in calorie for a dessert of it's kind.. so imagine if it was prepared at a normal restaurant how many calories a piece like that could pack!

Eye Opener!!!

The smartest frog I have ever met!

I know this is supposed to be a food blog, but I never said it had to be only human food.. Check out the smartest frog ever..

He's just hanging out by the light, and waits for the bugs to come to him.. He looks so lazy, but believe me he moves so fast the second he sees a insect!

While standing there for 1 minute I saw him eat enough for a life time...

Smart bugger!

Ooops! I did it again, I cheated!

Yesterday we left the spa to check out the new super done up Intercontinental hotel. It's not your typical chain. They really spent a lot of time creating something modern and local to the Thia people.
The food wasn't amazing, but when we got to dessert.. we just couldn't resist ordering the chocolate ice cream... And it was worth the guilt trip...
I swear I only had one scoop!

I really loved the place and I wanted to share a few photos with you!

What a great fire place. It may look small, but that area can seat about 30 people!

Chocolate cup cake 85.8 calories

Because they are so low in calories and not so sweet, we added some chocolate mouse on the top of the cup cake. Do be honest, I didn't love it that much, so unless you really want the recipe, I don't think it's worth posting!

Chocolate mouse..We added gelatin to gelify the mouse as opposed to just whipped cream!

The basic ingredients to make the cup cake!

Instead of using white flour, try using buck wheat flower. It has a lot less wheat to it!

They look so good in the oven!

What would you pick?

Yesterday lunch was a eye opener for me! Imagine what our dessert option were.. either a scoop of tropical fruit sorbet at 30 calories or a tiny lemon and poppy seed sponge square for 60 calories..

It really got me thinking.. a bite of something half my finger is the equivalent to a whole scoop of sorbet! Hmmm

What would you choose?

Discover the Quinoa!

I'm sure you have tried it before but didn't pay attention to what it was!

If you haven't heard about Quinoa, the super grain on the far right of the plate, then run to your closest store and buy a pack of these seeds! These Little guys are known to be a super food because they are packed with remarkable nutritional value (lysine, amino acid, protein, calcium and iron) and to top it all of.. they are super tasty!

The great thing about Quinoa is that you have to soak them for a while like oats, so they end up taking the flavor of whatever you mix with them like pasta..

So next time you are out to venturing with something new.. let it be the Quinoa!
