After the cheese is made, it is kept in a cheese house from anywhere between 3 months to 24 months for it to mature. The longer it ages, the stronger the cheese taste becomes, and the more it hardens also.. Oh and the more expensive it gets:)

I wish we had one in Kuwait.. the closest thing to it would be the huge fridge in Dean and Deluca!
